Use the Arch archives to back up to a specific date - then you can re-upgrade for your ‘fix’! Check our Wiki for easy ways to do that 
Unless I have zfs-kernel updates, most of them struggle to take as long as a minute - something to do with the hi-speed fibre connection I guess (not to mention the parallel downloads).
Oh - the kernel updates? Their repo is capable of only a few Kps - so minutes every time…
