So after updates yesterday, I rebooted and was greeted with a MASSIVE increase in the entire UI - as if scaling was set to 200%. I checked in the settings app and confirmed scaling is still set to 100%. No clue what changed to cause this.

Same happened to me on Mate. Is the solution the same as in KDE?
The strange thing is that I had a huge mess with my hybrid card and high dpi laptop vs lower dpi external screen, which displayed everything huge. After that update the bug you mentioned happened. I reset all my screen resolutions and switched on global scaling.
Now no problem anymore, plasma has finally fixed my screen scaling issues. Hopefully they will not clean up that bug, because it makes my system working properly
