I do see that Selfcooking is related to OS and Dinner :wink:
As a chef coming from healthfood this is something very nice to see, cooking on yourself is one of the biggest health benefits you can do to your self and your family!

Paella valenciana is the traditional paella of the Valencia region, believed to be the original recipe,[5] and consists of round grain rice,[6] bajoqueta and tavella (varieties of green beans), rabbit, chicken, sometimes duck, garrofó (a variety of lima or butter bean).[7][8] Artichoke hearts and stems may be used as seasonal ingredients. Olive oil is used as a base, while saffron and (sometimes) whole rosemary branches are used as seasoning.

But as @paco already mention, it is a valenciana if it is done by a valencian :wink:

We have quite a few recipes in Valencia, depending on where it is made, the recipe you have indicated is the most common in my area. And whenever I can, I do it with firewood :fire:

I don’t even know how to start to explain what’s this. you’ve to get the tongue and other internal organs of the pig, make it pices, boil it all together one or two times, add spices and press the mixture inside the cleaned intestins of a pig. it’s delicious with pà amb tomàquet, another typical catalan dish.

Coixinha de frango
Reindeer/moose stew
Wood grouse (bacon wrapped, filled with creamy potatoes, cooked in a fire oven)
Sour dough pizza with smoked reindeer, paprika, mozzarella, PINEAPPLE, rucola and our secret ingredients for the tomato sauce
Pasta Monsalve
Salmon/fish soup from our local harbour
