I’ll certainly have to look into brewing some ciders.
What I associated ciders with used to be SWEET, vomiting and more vomiting, and generally being very miserable.
But the Hardanger dry cider was just excellent, real tasty and a real thirst quencher, if that’s a word.
Ciders are quite easy to brew. It can be as easy as just buying apple juice and ferment"it. The real fun, is of course in making the juice yourself, from self-harvested apples. The yeast are also quite interesting. You ferment them spontaneously, with the wild yeast that’s already on the apples. Wild yeast will usually consume all sugar types, also the complex ones domesticated yeast will leave alone, resulting in a dry and crisp drink. But there’s an element of luck there, depending on the yeasts you get with the apples. I’ve harvested wild yeasts earlier, by placing a glass with beer wort under a berry bush, covered by a fine mesh, with good success.
The downside is that, by introducing wild yeast into you brewery, you risk infecting the gear. and thus the beer you’re making on it. You DONT want a wild yeast infection in your brewery. I’ll have to figure an idiot-proof strategy, probably involving separate brewing gear for wild yeasts.

Last time I drank cider was in 1988, on a school trip to Whitley Bay, England.
We sneaked out from the hotel at night to go to pubs. When the pub patrons figured there were a bunch of 15 year old thirsty norwegians in the pub, it became a competition to see how drunk they could get us. Last I remember was vomiting and more vomiting, and falling asleep in someone’s garden. Those were different times, hehe.
I just found this new refreshing beverage called beer.

I was inspired by @anon3337769 and when I saw this at the grocer a bit ago I had to get it. It’s exactly as advertised: hazy and less sweet. By far my favorite of their line up.
