Everything looks good to me. I just don’t know if the UEFI Bios just got messed up or whether the CMOS battery is failing. The CMOS battery helps keep the Bios settings so if it’s going dead you’ll lose the Bios settings. Check the date and just keep an eye on it and if it happens again you’ll need to replace the CMOS battery.
Edit: It could have just got messed up.
Just mark post #71 as the solution then if all is okay.
Edit: Part of the solution also goes to @keybreak for the video on the CMOS reset even though it didn’t work and we had to resort to removing the CMOS battery! 
I will keep an eye on it, regardless of the reason, thank you again for your help.
