Run in terminal:

sudo mv /boot/efi/EFI/BOOT/bootx64.efi /boot/efi/EFI/Microsoft/bootx64.efi
sudo cp /boot/efi/EFI/endeavouros/grubx64.efi /boot/efi/EFI/BOOT/bootx64.efi

Reboot to test, if no errors from the commands.

bx64.efi is the fallback option if the regular version does not boot for some reason.

mmx64.efi is the program that manages which EUFI keys you have installed.

There must be a whole lot more to this story than just and EndeavourOS install with Windows causing it to boot just Windows.

That’s fine!
You still have to keep your ESP as clean as possible.
There is a Recycle bin created, which is bad, probably from bad usage of gui programs as root. Do not do that.
You should delete the recycle bin and contents, using the terminal.
Read man rm for proper usage.
