There are various KDE applications I can install such as plasma-meta, plasma, plasma-desktop so I am not too sure which one I should go with if I want to install KDE desktop environment on EndeavourOS?

have a look at which package is still missing under Plasma
There is no single answer to that question.
My recommendation would be to use the group plasma
plasma-desktop
is just one component of plasma.
plasma-meta
is a meta package instead of a group.
Returned nothing so I guess I will install Plasma
Ok I just did sudo pikaur -S plasma
There is one thing it is asking me:

Which one should I chose?
to get a full plasma experience you could compare my data with yours after installing the package plasma
Whichever you prefer. Either will work.
My 2 cents.
Generally whenever installing any Linux distro I prefer to go with the defaults during installation. Select the options you need and follow the defaults. This is what I personally do in general.
