I will be roasting a pork crown roast for Christmas, and I’m trying to find a pork rub that doesn’t have a lot of salt. I’m not looking for something that is hot but a little spicy is ok.
Typically pork rubs are high in salt. However, you can make it however you like it. I guess you go heavy on herbs.
I’ve been using variations on this for years. Sweet and spicy. Adjust to taste, this is just the base I use, depending on the meat.
1 TBS Garlic powder
1 TBS Onion Powder
1 TBS Salt (less if you'd like)
1 TBS Cayenne Pepper
1 TBS Black Pepper
1 TBS White Pepper
1 Cup Brown Sugar
1/2 Cup Smoked Paprika
2 TBS Chili Powder (optional)
- TBS = Table Spoon
I was a cook in the Marines. The way I learned was, a T= tablespoon and a t= teaspoon
That’s a lot of pepper I’m making the roast for my 86 year old mother. I better not use all the pepper your recipe is calling for.
That also depends on how big your roast it
I would probably be more concerned about the cup of sugar lol than the pepper ingredients, but I suppose you have to cope with the lack of salt somehow.
My rubs are basically what I feel like at the moment. I typically don’t use a recipe for almost anything.
This is not a rub, but couple of years back my father-in-law made ham boiled in cider.
Interesting. As a rule I don’t boil meat, but in the suck, I cooked a lot of New England boiled dinner. Which if you don’t know is boiled corned beef, cabbage, carrots, and potatoes.
Im in uncharted territory, so Im not sure how it will turn out, but besides a light rub of pepper cumin coriander and ginger, I liquified a container of mango peach salsa, and I am using it as a marinade.
I gotta say I like my corned beef in a slow cooker with no water (makes plenty of own juice). I should make sure and buy one for NY if I can find one. Thanks for the notion.
I make a pork rub which I use regularly, I used it on my pork roll yesterday for Christmas lunch with the In-Laws and today on a ham for Second Christmas lunch with my family.
Ingredients for those interested.
Iodised Salt
Whole Star Anise
Whole Cloves
Fennel Seeds
Whole Black Peppercorns
Garlic Powder
Grind it all up in the mortar & pestle or spice grinder.
Smells incredible and if you cook your pork on a smoker it tastes even better!
Your recipe is interesting. The anise, cloves, and fennel are none of the ingredients I have seen when I searched online for pork rubs. I will have to try your recipe next time I do a pork roast.
I typically use salt, black pepper, sage, paprika, thyme. I may add oregano, ginger, cayenne pepper, white pepper, MSG (yeah) as the mood strikes me. Dependent upon the cut, a bit of brown sugar might appear.
It is a very Christmas sort of taste and smell. Fennel is classic with pork, I’m surprised you didn’t come across anything. I only use one whole anise and maybe 8-10 cloves. I didn’t want it overpowered.

Fennel Seeds - quite a lot
Cumin Seeds
Black Pepper
Onion Powder
Garlic Powder
Dried Rosemary
Salt
I can give exact amounts if needed
In hindsight I do not think mango peach salsa is a good marinade. It tastes great, but it added no flavor to the pork that I could detect. In consolation, the roast was the most tender roast I ever cooked/ate. I can cut a 1" thick slice with a fork. Its awesome.
