script-image-build.sh is the main script.
script-image-chroot.sh is a script called by script-image-build to do some configuration in arch-chroot

I think for the most part the scripts are fine. We made a decision to change from mbr to gpt a few years ago to fix some compatibility issues. But we were operating with updated Raspberry Pi’s so we never faced an issue before.
