If you get one be sure to get an ‘Instant Pot’ as it is the only one with a stainless steel inner pot. The rest have nonstick coatings in the inner pot which doesn’t work out in the long run.

We have two Instant Pots. A six quart and a eight quart. When I do a pork butt for carnitas I use both to hold it all.

Other wise I use the 6 quart for most things, and the 8 quart for soup. My wife’s favorite soup in the pressure cooker is Pasta E Fagioli although my recipe probably isn’t totally authentic.

We also use an air fryer as well. I can’t remember the last time we needed an oven lol!

Sausage Gravy

Ingredients

1 pound ground pork sausage
3 tablespoons bacon grease
¼ cup all-purpose flour
3 cups milk
½ teaspoon salt
¼ teaspoon ground black pepper

Directions

Step 1

Brown sausage in a large skillet over medium-high heat. Set aside, leaving the drippings in the skillet.

Step 2

Mix bacon grease into the sausage drippings. Reduce heat to medium, combine with flour, and stir constantly until mixture just turns golden brown.

Step 3

Gradually whisk milk into skillet. When the mixture is smooth, thickened, and begins to bubble, return the sausage to skillet. Season with salt and pepper. Reduce heat, and simmer for about 15 minutes.

The only bad thing about it, i eat more fries (not fried, lol)

I’ve not one.
But a friend of mine has an Air fryer, and it’s “frying” very well

In the US there is a restaurant chain called The Olive Garden, which specializes in Italian cuisine. Although in reality it is probably more like Americanized Italian cusine. Of course Olive Garden serves pasta e fagioli which my wife really enjoys. My wife watches a TV show on the Food Network which features Rachael Ray. Rachael’s mother was born and raised in Italy. In one episode of the show, Rachael was making Pasta e Fagioli and of course my wife wanted to try it. The recipe works great in the Instant Pot.

pancetta is hard to get and expensive where I live, so I usually substitute crumbled Italian Sausage for the pancetta. Ouch, I know that’s kind of a sacrilege. Also I add a teaspoon of Herbs de Provence that I make. I don’t like the lavender flavor so I make my own.

Between TV and the Internet, you can find a recipe for just about anything you want. Try a recipe, then alter it to suit your taste.

In Italy we have a lot of versions based on region: your recipe is very similar to many :slight_smile:
Rachael Ray is really famous!! <3
It’s a poor tradition of cooking: it’s prepared with rind, mostly.

The classical versions has:

  • Pasta (usually ditaloni)
  • Rind (don’t throw anything from pig, then poor ingredient) but modern versions has lard or pancetta
  • Beans
  • Onion
  • Carrot
  • Garlic
  • Rosemary
  • Laurel
  • Salt
  • Pepper
  • EVO oil

Interesting. I’ve never tried Carbonara with beans, carrot, rosemary and laurel. Could you point me to a recipe to try it out?

I have prepared, and eaten, desserts in a thousand different ways, in my blog you can see them: recetasbellas.com, but I still do not find anything that exceeds the simplicity of a good fresh cheese with quince
