I don’t see why an update would do this? (kernel panic) It seems to me that the drive has been damaged somehow. (gone bad or died) If after an update you got a kernel panic and then now the drive isn’t being recognized but yet it was before. It may not have anything to do with the latest ISO if you installed it before and it was working and then something happened with an update and you got a kernel panic as you say and then the drive was not longer being recognized. It just might be the drive.
It seems that this SSD have some issues on Linux, check this question on askubuntu and take note of this:

On the linked question, OP said that wanted to install Ubuntu 18.04 or 20.04 and didn’t work, but it did on Ubuntu 21.04. So, this is not an Arch Linux (or based Arch distros) issue, but maybe a kernel issue.
You could try installing with an old ISO and selecting an LTS kernel, but even if it works, the issue can come back in the future.
That’s probably what borked it in the first place. An updated kernel and it had a kernel panic and failed to be recognized after. Not all nvme drives are the same. To me only nvme drives that are running off the Pci-e bus are worth even having otherwise you might as well have a normal ssd drive.
