Got a little problem with eos installation recently. I want to install minimal DE with no unnecessary apps to customize it by myself later, but I don’t know which packages should I uncheck in KDE-Desktop section.

EOS is a minimal install so honestly I don’t believe you need to remove anything. Its already pretty basic. Other than personal preference for Apps there is no need.

depends really how minimal you want to go.
This is the list of packages that gets installed when you choose KDE in EnOS installer.
Personally, if I were to go minimal, I could think of unchecking quite a few of them.
For example, Haruna. I don’t understand why that choice should be made on my behalf.

If you are really interested of having a minimal install, I would recommend installing Arch Linux and add whatever you decide yourself to your installation.
Yes it’s pretty minimal for a KDE environment and this way you will end up with a system that should work as expected.
I forgot about Haruna I would probably remove this for a minimal install as I think vlc is now called in as a dependency

In my opinion, if you want to get a minimal kde install, you would just need plasma-desktop plus sddm on an Arch base install and build it up from there.
