When i install the newest version of kernel-zen with yay or pacman then it will install the newest version and it will remove the older version !
Is it possible to keep also the older version so i can go back into the older version at boot time ?
No, there is not an easy way to do that unless you build your own kernel packages. You also shouldn’t do that because non-LTS kernels are EOL very soon after the new kernel is released.
You could, however, also install the LTS kernel, linux-lts
so you would also have an older kernel available.
