I am decently New to Linux, and I installed the plasma desk environment with the help of a friend and i have everything setup, but whenever i open dolphin, my second hard drive gets named “New Volume” and every single time i reboot or shutdown it unmounts it and i have to mount it through dolphin every time. Is there a better way to use console for this, as mounting things in the console with bash/zsh is complicated for me.

You can do it with Fstab file.
If that seems too difficult, one gui option is to use the gnome-disk-utility.
