Ffmpegthumbnailer vs ffmpegthumbs

I came across a guide on Reddit that recommends replacing the default ffmpegthumbnailer installed with EndeavourOS with ffmpegthumbs

But what exactly is the difference between these two packages? Is it a good idea to uninstall the former and replace it with the latter?

ffmpegthumbs is still maintained and made by KDE itself. That’s what I see when looking at this.

For KDE Plasma, yes the replacement is worthwhile. You might also want to consider adding the kdegraphics-thumbnailers package.
