Which is better for gaming? Fedora with Gnome or Endeavour OS with Gnome?
They are both Linux so they should be equally good.
It is easier to manage proprietary software and drivers on EOS than Fedora if that matters to you.
There are Fedora-based distros like Nobara which are specialized for gaming and make installing things like nvidia drivers a lot easier if you prefer the Fedora route.

I would not get caught up in the which distro for gaming as much. You can have a little argument when you are talking about LTS type distros, but even then, it is not a huge gap. When talking between Fedora and EndeavourOS, they are both going to have newer packages, kernels, and drivers.
It comes down to what you are more comfortable with and if you prefer things like rolling releases, standard release, etc.

Well Valve cooperates with Arch Linux. Maybe in the future Arch will be a little step ahead, but in the end it shouldn’t really matter that much and you should choose what gives you the better impression in a whole.
I’ve read (and believe) that a lot of the most performance intensive things are games and that gaming basically requires the latest drivers/software.
Well, in that cases, Arch does have a slight lead already, but also comes with bleeding edge…well bleeding (once in a while). I recently had a Proton issue, which had alternative solutions, and was resolved within a day in any case.
I have to be honest and say that I have not noticed much of a performance difference on Gnome with different distros, on gaming and other stuff. I think this ends up being up about your preference and which distro you find yourself familiar with and which suits your needs best.

My gaming computer is Debian Stable Gnome, and I was rocking Forza 4 last night on ultra with my 1440p monitor capped at 144fps (monitor maximum) and it’s fantastic.
I’m on flatpak FYI.
I don’t think it matters anymore
If you’re a pro or “elite” gamer you’re probably still on windows to get that extra 1 fps from Linux.
