I am absolutely new to Linux, and to learn this system want to use it on an old Asus TP200s, with these specs:
Intel Celeron N3060 - 1.6 - 2.4 GHz
32 Gb SSD and 32 Gb SDcard
4 Gb RAM
Will this “machine” be able to handle EndeavourOS, or am I limited to stuff like Lubuntu and MX Linux?

Give it a try. I had it on an very old Samsung N150 Netbook with Intel Atom N450, 2 GB DDR2 and 128 GB SSD with Xfce. It “worked” (it was slow but that thing is 15 years old). Just give it a try.
Choose Xfce instead of KDE Plasma.

I think you are definitly not limited to these options.
As long as you dont choose a distro that comes packed with a lot of pre-installed stuff (which would leave not much room on your 32Gb drive) or choose a DE like Gnome (you can try but your Celeron wont be very happy about it i assume) you will be mostly fine.
I read around and it seems a few people even got KDE to work on it with EndeavourOS or Arch, but they sadly didnt mention how well it worked 
So you can try, but I as well would recommend you choose xfce or LxQT as DE, something that is more lightweight.
Also welcome to the forum
Create a swapfile and zram (post install).
Do some research which are your options among “lighrweight” DEs. If the option is not available to you in the installer, you could install without a DE and install your DE of choice later. A bit of knowledge required. And a bit of own work.
That’s what I have done! Now I got raw system with Niri WM.

That’s what Arch is all about. You build the whole system up with some building blocks and take it into any direction you want.
I was going to suggest to look into WMs but you have found your way to it on your own.
