XFCE. So, I am installed. Apparently the last GPT wipe we did along with the fact that I set up the partitions and AND THEN I hit manual and changed the flags to what they need to be seems to have done the trick! Thank you so much for hanging in there with a newbie like me. Appreciate all your help!

That’s awesome. Hopefully now the file system and partition table is corrected and you won’t have the problem next time around. It should have no problem using erase disk automatically. But, sometimes these things happen and stuff doesn’t work right.
