I have several videos (primarily mkv and mpeg) where I now want to change the tags. I tried it with VLC (Tools - Media Information), but despite save the changed tag is not preserved after restarting the video. What else works?
For mkv, there is this tool called mkvtoolnixgui that’s reliable and has tons of features.

For MP4, I guess easytag will work.
