Now that bcachefs has been merged for 6.7, will the default kernel on EndeavourOS support it?
The kernels come from Arch so it will be up to the Arch kernel maintainers if it gets added.
That being said, I don’t see any obvious reason it wouldn’t be enabled.
It is not about the kernel though ( or not just that ). Support needs to be added to the installer.
That is true from an install perspective, but this question was specifically about the kernel supporting it.
Calamares(the installer) has not added full support bcachefs yet.
CacheyOS allows you to use bcachefs though.

Let me re-frame my response to @dalto in purely EndeavourOS terms:
Support for bcachefs HAS been added to the Calamares installer. EndeavourOS does not ship with that support.
@sardaukar, I am sure you have figured out by now that the EndeavourOS kernel does ship with bcachefs support at this point ( nobody above has actually said that yet ) and that bcachefs-tools is in the repos. However, it cannot easily be used as a root partition as the version of Calamares that ships with EOS does not include it as an option.
