I’m mostly indifferent towards it.

However, what I really like is homemade hot sauce made with pineapple and bhut jolokia peppers.

The recipe is really simple...

The exact amounts of ingredients have to be determined by trial and error, depending on the desired hotness of the sauce. Do this outside or in a well-ventilated kitchen, because tear gas will be released. Also, wear gloves when handling chilli peppers.

  • Process sliced pineapple and bhut jolokia peppers (or any other super hot chillies) in a blender, until fairly smooth. If it looks dry and won’t process nicely, add a splash of pineapple juice (or, if times are tough, a splash of water).
  • Clean the blender and similarly process chopped onions and garlic, until equally smooth.
  • Saute the onion and garlic with a small amount of olive oil and a pinch of salt on very low heat until translucent and not tasting raw. Do not let it get any colour.
  • Add the mixture of pineapple and chilli, increase the heat to medium and wait until it starts to boil.
  • Pass through a fine mesh sieve. Cook it a bit until it thickens up to the desired consistency.
  • Adjust salt to taste. If it is not acidic enough, you can add a small amount of apple cider vinegar or some lime juice. You can also add a bit of sugar if it is too acidic, but usually the pineapple is sweet enough.

I like to put this sauce on everything, including pizza.
