I have two inxi outputs, one from the iso image loaded and the other from the installed system.

Post these here, please.
Also

journalctl -b | grep -i nouveau

journalctl from the iso loaded or from the installed system?

From the installed system you just did that you say doesn’t work!

If you have the system installed and booting into endeavouros all you need is this and post the link.

inxi -Faz | eos-sendlog

This would work from the booted ISO as well?

Not for what i was asking for as i want to see the installed system that you are saying is not installing nouveau from the default entry from the live ISO.

Then I will additionally run this from the installed system.

Do you have it installed yet from the default entry? Then just boot into the installed system and run the command and post the link.

That command send inxi data to a pastebin service and returns an internet address where it was stored. Simply show that address here.
