If I were a betting man (and we know Bender loves gambling) I’d put money on it being in the Arch wiki.
After updating BIOSes on both NUCS I no longer had installation failures. So I reinstalled a clear EOS qtile on both (one partition /boot/efi for UEFI and one partition / for the rest) . Then I reinstalled an encrypted EOS qtile (same /boot/efi parition for UEFi, one partition /boot and one for /). Now grub is working as expected.
