EFI looks like a windows sized EFI, and probably too small.
I am guessing this was your EOS EFI partition. Is it possible you switched the EFI partition in your troubleshooting somewhere?

First, mount /dev/nvme0n1p5 and see if it is an EFI partition for EOS.
If it is, it will have a directory in it with a big string of characters and a loader directory.

Okay, seeing the /etc/fstab I remember what I did. I just repeated the process correctly this time.
/etc/fstab file was using other UUID so I updated it the right value from blkid /dev/nvme0n1p5
reloaded systemctl daemon
did reinstall-kernels and there were no errors
