You are getting tons of i/o errors. That would most commonly indicate your filesystem is full or corrupted.
Hm. As of right now df -h gives me /dev/sdb2 932G 916G 14G 99% /mnt for the SSD in question. I do remember just before the update via pacman --root /mnt --cachedir /mnt/var/cache/pacman/pkg -Syu on March 20th there were ~9.9GB free (which caused the update to fail).
That’s when I removed some btrfs snapshots to free up space (smart move, I’m aware now ;; ), update went through and now we’re at the above.
So that would explain some of them, but most definitely not the ones from today/yesterday after around ~1800).
Assuming the filesystem is somehow corrupted, how would we find out for sure & how should trying to fix that be approached? Accessing the data from the live medium seemed completely fine so far if that helps.

e2: Since I saw a lot of /usr/lib/ related errors in there I thought I’d pacman -Syu via chroot again and then see if I can resolve the ldconfig complaints in there I mentioned earlier. This time around I got Bus errors that way too.
This did not happen before, the output for pacman -Syu that I showed in an earlier post looked a lot more… normal when it was a smaller update.

This is not what was suggested. Try the proper way (in case you are lucky and this helps…).
You were still getting i/o errors after that point.
There is something very wrong with your disk or filesystem.
Have you tried running btrfs check on it?

Your disk is very nearly entirely filled. You might want to recover some space then, given
reinstall all packages.
You should also run a RAM test; silent filesystem corruption can happen if there’s an issue with your RAM.
Just to be clear:

And since it’s btrfs, if you just delete data, it will probably leave those chunks partially filled and therefore allocated. You may need more unallocated space.
Check with btrfs fi usage / free space.
If you’re lucky, you may not have to balance your filesystem or span to another device.
